To My Health Challenge Cohorts

There comes a time in every girl's life when she has to learn to stand up for herself...a time when a girl has to learn that her own needs matter...that she doesn't need to stick with the status quo if it just doesn't work for her...that sometimes it's okay to take the road less travelled...or the road travelled most, whichever the case may be...

I am so tired of trying to follow all the oppressive rules of the health challenge. Okay, yes, I am tremendously grateful for the eight pounds I have recently lost, and I have no intention of finding them again, but enough already! I am taking a break dangit...big time.

Behold, I give you the Chocolate Frosted Brownie.



Yes, I fell off the wagon today. More than that really. I fell off the wagon and pulled the whole dang wagon down on top of myself.
The brownie part is pretty insignificant really. It is merely the mode of transportation for the frosting. The frosting is the focal point. Dreamy. Divine even. (And I don't use that word loosely.) It's delightful on cardboard.

Lesli's Chocolate Frosting
1 and 1/4 sticks unsalted butter
1 and 1/2 tsp. vanilla
1/4 cup plus 2 Tbs. cocoa
3 Tbs. corn syrup
1/2 cup heavy whipping cream
3 cups powdered sugar

Beat butter til light and fluffy, which works best if the butter is softened or at room temp. Add vanilla, cocoa, corn syrup and whipping cream until smooth. Gradually add powdered sugar. Stir constantly until spreading consistency. Add more cream if needed.


Now, if you'll excuse me, my french fries are getting cold and I believe my fully loaded Dr. Pepper is sufficiently chilled...

YUMMY!!!! I may have to try that at some point. Now if it just weren't too dang hot to heat up the oven.

Congratulations on the 8. Enjoy the fall and get back on your "wagon"! That icing does sound wonderful.

Neil and I are dropping out completely. We haven't lost an ounce in the last month, and what we eat hasn't changed other than the occasional frozen yogurt twist that I so desperately need at least once a week. We figure we must be eating and exercising enough as it is to have seen NO changes in our bodies at all. It's kind of disappointing.

So we are humbly waving our white flags and surrendering our $40.

I always expect to fail the health challenges because I have no will power around chocolate. Women and chocolate are designed to go together-like butterflies and flowers. You've gotta do what works for you! Way to go on the 8 lbs.- That's great!

This sounds so good but since Hubs has NO will power towards sweets and that frosting might send him into a diabetic coma......I am going to wait until it cools down at Shan's and eat it there!!!

Oh I love this frosting! I've actually thought about it often in the last few months that I've been dieting... I think I'll have to splurge next Sunday. Although after a week in Houston I'm not sure my body can take any more. I was BAD!

We made this today! It is so delicious. My sister called and asked me for a dessert idea and I instantly thought of this post. Also I happened to have all of the ingredients on hand (yeah, I have heavy whipping cream in the fridge at any given moment. What's it to you?) Thanks for the recipe. I could shovel it into my mouth.
